(VEGAN)
A unique salad with mayonnaise-like dressing using cashew nuts. Feel free to change the ingredients to your liking.

Ingredients for 2 people
-Brown Rice Pasta/White Rice Pasta 9 oz
-Dried hijiki seaweed ¼ cup
-Sunflower seeds ¼ cup
-Pumpkin seeds ¼ cup
-Carrot (julienned) ¼ cup
-Cilantro (julienned) ¼ cup

(Cashew Nuts Mayonnaise)
-Cashew nuts ½ cup
-Onion powder 1 Tsp
-Garlic powder 1 Tsp
-Plum vinegar 2 Tbsp
-Olive oil 1 Tbsp
-Lemon juice 2 Tbsp

 

Directions
(1)Soak the cashew nuts in water for about 2-3 hours. Combine all cashew nuts mayonnaise ingredients and cream in a blender or mixer.

(2)Soak the dried hijiki seaweed in water for 10 minutes. Julienne the carrots.

(3)Cook the brown rice pasta for 2 minutes (white rice pasta for 3 minutes) in boiling water, and then wash under running water to remove the slime.

(4)Mix the sunflower seeds, the pumpkin seeds, julienned carrots with the pasta, and dress with the cashew nuts mayonnaise.
