(VEGAN)
An unusual dessert using noodles. With much fruit inside, it is very filling and satisfying.
Ingredients
(One 7-by-7 inch baking pan)
- Brown Rice Pasta/White Rice Pasta 9 oz
- Silken tofu 1 pack (or 1 lb)
- Apple sauce (or grated apple) ¼ cup
- Cinnamon, cardamom, ginger powder, vanilla essence, each ¼ Tsp
- Arrowroot 2 Tbsp
- Raisins ½ cup
- Fuji apple 1
- Nectarine 2
Directions
(1)Combine the tofu, apple sauce, arrowroot, and spices in a bowl. With a blender, blend until smooth.
(2)Cook the brown rice pasta for 2 minutes (white rice pasta for 3 minutes) in boiling water, and then wash under running water to remove the slime.
(3)Dice the Fuji apple and nectarines into 1/2 inch cubes.
(4)Mix all ingredients into the pan, and bake in oven at 425 degrees F for 30 minutes until the surface slightly browns.
